Coleslaw is a must in our household and Daddy took it upon himself to make it with Mia one day as a trial. It was such a huge hit and was easy to make that it is now regularly made at home. It lasts for approx 2 days, although is best served immediately.
INGREDIENTS (makes enough for 6-8 people)
1/2 White Cabbage (shredded)
3 Carrots (grated)
2 Red Onions (sliced)
1 Lime (juice)
3 tsp Grainy Mustard (optional)
2 tbsp GF soy sauce
Salt and Pepper
How we did it:
- Put the vegetables in a large bowl and mix them together.
- Add the mayonnaise and mustard and mix thoroughly, so that all of the vegetables are coated.
- Add the lime juice, salt and pepper and mix thoroughly again.
- Cover with clingfilm and leave in fridge for 30 minutes before serving.
