Daddy’s Crunchy Coleslaw


Coleslaw is a must in our household and Daddy took it upon himself to make it with Mia one day as a trial.  It was such a huge hit and was easy to make that it is now regularly made at home. It lasts for approx 2 days, although is best served immediately.

INGREDIENTS (makes enough for 6-8 people)

1/2 White Cabbage (shredded)

3 Carrots (grated)

2 Red Onions (sliced)

300g Mayonnaise

1 Lime (juice)

3 tsp Grainy Mustard (optional)

2 tbsp GF soy sauce

Salt and Pepper


How we did it:

  1. Put the vegetables in a large bowl and mix them together.
  2. Add the mayonnaise and mustard and mix thoroughly, so that all of the vegetables are coated.
  3. Add the lime juice, salt and pepper and mix thoroughly again.
  4. Cover with clingfilm and leave in fridge for 30 minutes before serving.
